A fizzy and tangy fermented lemonade that has a boost of probiotics (beneficial bacteria).
** To remove chlorine from city water, allow it to sit in an open container for 24 hours. Alternatively, you can boil it for a few minutes and allow it to return to room temperature.

- 10 lemons/limes, juiced
- 3/4 cup sugar
- 1 cup whey
- 2.5 - 3 litres filtered water, spring water or de-chlorinated water
- 4 litres or "gallon size" glass or food safe plastic jar

Instructions
- Pour the sugar into the gallon size glass jar and add just enough hot water to dissolve the sugar.
- Add lemon juice and fill the jar about ¾ full with filtered water.
- Make sure the liquid is at room temp and add the whey.
- Cover tightly and let sit at room temperature for 2-3 days, preferably out of direct sunlight. The longer it sits, the less sugar in the final product.
- After 2-3 days, keep in fridge and only drink 4-6 ounces per day if you’re not used to drinking a lot of probiotics. The flavor will continue to develop in the fridge.
- Since the sugar ferments out, this will be quite tart. Add additional sweetener to taste – honey, sugar, molasses, maple syrup, stevia – and feel free to experiment with adding other juices for both sweetness and a different flavour. Strawberry, raspberry or watermelon juice are fantastic additions.
