Did you know you can eat Sweet Potato leaves? Neither did we…until a newcomer from Liberia visited our U-PICK-By-Donation recently and asked if she could harvest some from our Market Garden.
She told us that the benefit is two-fold:
1) the leaves are absolutely delicious to eat and
2) trimming the leaves helps to direct the plant’s energy to the business of growing the sweet potatoes underground.
Who knew? Here’s her simple recipe:

Instructions
- Wash the leaves well and cut into strips.
- Chop enough onion to equal 1/2 the amount of the leaves.
- Heat a little oil in a pan, add the onion & your favourite spices and saute until the onion is golden.
- Add the sweet potato leaves and when their texture is soft, they're ready to eat!
