Everywhere on the Indian sub continent, you will find similar recipes as this one – using deep fried batter containing onion. This is the Indian equivalent of onion rings in their fast food outlets.

- 4 onions medium
- 400 g plain flour
- 2 tsp cumin
- 2 tsp ground tumeric
- 2 tsp baking powder
- 3 tsp fresh chilli powder
- pinch of salt
- vegetable oil for deep frying
- 1 tsp curry (optional)

Instructions
- Mix the flour, spices and salt in a bowl. Gradually mix in enough water to make a quite thick, sticky batter. Add the onions and mix well.
- Heat the oil to 180C. To check if the oil is hot enough, drop in a little of the batter. It should start sizzling immediately, but not too much.
- Form the batter into 24 balls.
- Deep fry for 2 minutes, turning halfway through.
- Drain on kitchen roll and serve.
